Richard has had four good days in a row this week and we are thrilled!  He had been on some diuretics to help with his ascites which caused his sleep to be interrupted.  Since they have been discontinued, he sleeps much better and consequently, enjoys the day ever so much more!

Other highlights:

Julie and Wayne visited with us while they were in Naples this week.  Brother Dru is here for the weekend and Meg flies out early tomorrow to Denver with a week of meetings re finding employment in Denver.  You’ll see some pictures below of Meg’s shoes when she took her golf lesson from Richard on Friday.  No one else wore golf shoes quite like her’s????  Also cousin Leslie sent Meg Elaine’s recipe for orzo that we really enjoyed tonight so that’s included here too!  Bon Appetit!

Orzo With Everything

6 Serving

1 ½ cups orzo

1/3 cup (packed) chopped drained sundried tomatoes

5 tablespoons extra virgin olive oil

¼ cup balsamic vinegar

¼ cup (packed) chopped Kalamata olives

Cook orzo in boiling salted water for about 8 minutes. Drain well and transfer to a bowl. Add remaining ingredients and toss well to blend. Let cool. Can be prepared 6 hours ahead; cover and refrigerate; and bring to room temperature before serving.

Mix in the following ingredients just before serving.

1 cup finely chopped radicchio

½ cup toasted pine nuts

½ cup chopped fresh basil

½ cup freshly grated parmesan cheese

2 large gloves of garlic, minced.

Great with steaks, veal chops and Cornish hens.

    Meg – I think you look fabulous dahling! Surely the fashionable shoes will distract anyone who might be critical of your swing. Okay, except maybe your Dad. We all know how important the Lord’s game is to him.

    Good luck on your job hunt in Denver – the climate there must remind you of your childhood Canadian home. Can’t wait to try Elaine’s orzo dish – sounds yummy. Love to you all.
