7 holes!

March 20, 2010

Hello from Meg! It has been a wonderful few days here in Indiana.  How blessed are we to have this spring-like weather already by the middle of March?  We have taken advantage of this sunshine and 70-degree weather, spending as much time on walks and sitting in the sun as possible.

Today was an especially great day.  Dad, Mike, and Aunt Elaine made it out to Prairie View and played 7 holes.   Everyone played well and Mike even made a birdie.  Dad drained some long puts and Elaine got some great shots in as well.

You may or may not be interested in making a green smoothie.   If I have learned anything from my mom, though, the best way to help someone become interested in something is to force them to do it.   Hence, I have forced almost every friend and family member who has been here to try my green smoothies.   There is no secret to making the perfect green smoothie.  The only rule in this house is the ratio of vegetables to fruit is 3 to 1.  So here is just a sample recipe of what our morning breakfast looks like:

-1/4 cup of raw almonds

-1/2 cup of water

-4-5 cups of spinach

-1 banana (good for thickening the smoothie)

-1 orange

It is best to grind the almonds first and then add water, which will make an almond milk of sorts.  Then, go ahead and add your fruits and vegetables.  Depending on the fruit you most enjoy, you can switch out the ingredients.  Sometimes, I prefer raspberries and strawberries.  Other days the fruit of my choice is blueberries.  Spinach is one of the best vegetables to use as it blends down to almost nothing, is full of vitamins and nutrients, and  does not have a strong taste.  Kale is another great addition, though you have to have a good blender to not end up with a chewy smoothie.

My dad’s illness has been a huge motivating factor for me in prioritizing my health.  If you are interested in more resources, two of our favorite sites for healthy recipes are:

Many thanks for sharing the recipe and the latest news with us Meg. I’m so glad that the weather has been good and that you’ve been out making the most of it.

Imagine playing 7 holes of golf in mid-March. Richard is truly amazing and an inspiration to us all!

Lots of love (and wishes for continued sunshine and warmth).

    Hey Meg,

Thanks for passing along the story of Rich, Elaine and Mike’s lovely golf day, and thanks for the green smoothie recipe! I have yet to try it, but it will soon go into rotation at our house. I also hear that you did really well on your GMATS last week. Way to go! By the way, I have just read “Animal, Vegetable, Miracle” by Barbara Kingsolver. Have you read it? It’s a great diary of her family going locavore for a year.

love to all in Indy and prayers for more sun and more golf,

Thanks to Meg for passing on the golf news. What a treat for all 3 golfers to be able to play in sunny, warm weather in March. We hope you get out again soon. Paul is envious… we were in Florida last week for March Break and every time I saw a pelican I thought of you Rich and Jane.

Thanks for your green smoothie instructions too. Lisa got me started on fruit smoothies but I know we should be consuming more veggies and will give it a try. Any tips on how I get your uncle to take that first sip?

    Love to you all,

Hi everyone… So glad to hear Richard played 7 holes… It is snowing lightly here in Montreal, so we will have a few more months to wait.

    Take care,

    Green Smoothie Alert!
I just made my first green smoothie for lunch. I have tasted Meg and Jane’s several times but now I can say the green smoothie bug has travelled across the border to Ballantrae, and infected our household.
